Dijon and Cilantro Tuna Salad Sandwich

Try this delicious Dijon and Cilantro Tuna Salad sandwich on whole grain bread.

TIME: 50 minutes

SERVES: makes 6 sandwiches

INGREDIENTS:

1/3 cup reduced-fat mayonnaise

2 tablespoons Dijon mustard

1 tablespoons whole grain mustard

1 garlic clove, minced

1 tablespoon fresh lime juice

6 tablespoons sweet relish

2 (6 ounce) cans solid albacore tuna packed in water, drained

1/2 cup chopped celery

1/2 cup chopped red onion

1/2 cup chopped fresh cilantro

12 slices whole grain bread, toasted

2 medium tomatoes, sliced

arugula leaves or spring mix

DIRECTIONS:

  1. In a large bowl mix together the mayonnaise, both mustards,garlic, lime juice and sweet relish until well blended. Stir in tuna, celery, red onion, and cilantro. Cover and refrigerate for at least 30 minutes.
  2. Spoon 1/2 cup of tuna on a piece of toasted bread. Top with tomato, arugula and a toasted bread slice. Cut sandwich in half.
